Quinoa, like most complex carbohydrates, is a nutritional powerhouse.  Besides offering the highest protein content of any grain, this gluten-free gem also provides a nearly complete protein, as it is, unlike other grains, high in the amino acid lysine. (One reason why vegetarians are advised to combine grains with legumes, or grains with nuts/seeds, is to achieve a “complete” combination of all nine essential amino acids...

Editor's Note: Since I pack my lunch for work everyday and I don't have a way to heat anything up I'm always looking for something other than the usual salad that has become the mainstay staple of my lunch. This is a wonderful addition and of course great source of protein for those trying to cut back on meat consumption yet still get enough protein out of their diet. The fresh herbs and spices give this salad a great flavor and add anti-inflammatory benefits to the dish. Additionally, fiber from the beans protects our hearts by pulling cholesterol out of the body.

Editor's Note: As we gear up for summer and its bounties here is a lovely, cooling recipe to help you use up those cucumbers. Very low in calories and high water and fiber content make these veggies one of the best for people trying to maintain weight. They also contain vitamin K, which is essential for healthy blood vessels and bones and small amounts of almost all vitamins and essential minerals. If you are using the seeded variety, you will get enzymes as well, which are essential to helping you digest your food.

Editor's Note: I love kale and I love lemonade... but I've never tried both together! This recipe looks really great and I'm going to try it out really soon.

Healing Recipes

Editor's Note: In my kitchen virtually no food "scraps" get thrown away. I usually take all of the ends, skins etc. and freeze them and then use them to make my own veggie stock. While I admit that's awfully ambitious, and as some have called me neurotic, I'm very anti food waste, so I try and do my best to not discard anything edible. I thought this was another creative, yummy way to use the part of the broccoli most people pitch in the garbage. When I made the recipe I tweaked it a bit and used some asparagus and a potato or two to give it a heartier texture and it came out very good!

We love our whipped cream in coffee, on berries for dessert, really on any of our primal desserts.  But it’s nice to have an alternative to dairy and for our Paleo friends...

Editor's Note from Sherri Carter: When I saw this recipe, I instantly knew it was a must try! With so many people who can't do dairy, and even for those who can, this is a wonderful, healthy alternative.

This is a great summer salad. So nutritional and chock full of vitamins and minerals. Lots of fiber to keep you full. The brown rice offers an excellent source of manganese and a good source of selenium and magnesium. Also rich in fiber. Almonds are nutritionally dense containing protein, vitamins such as A, B, C and E and minerals like calcium, potassium, iron, selenium and manganese...

We are pretty loose with this recipe at our house.... sometimes we only use butter–other times just oil. My kids are making it every time now, so I am just thankful!...
