Editor's Note: I wait for pomegranates ALL YEAR LONG. They are probably in my top three favorite foods of all time and this just looks like a wonderful recipe to add to my ever growing list of foods I try to serve at Thanksgiving to get my family converted to a healthier and cleaner way of eating. Butternut squash is full of beta-carotene and when roasted becomes very savory sweet. I believe that the pomegranates, which are rumored to be the HIGHEST levels of anti-oxidants of all fruits will pair vary nicely with the squash and crisp greens while protecting your heart and brain against disease and cancer. Also full of fiber and vitamin C this dish lends a helping hand to the digestive and immune systems as well.
