Editor’s Note: Sauerkraut and other related fermented vegetables like Kim Chi are incredible superfoods. Sometimes I find myself hard pressed to convince people to add these foods to their diet, because of their pungent flavor, but I assure you will get use to it, and if you use this recipe you will probably actually enjoy it! Not, only is this particular way of preparing sauerkraut delicious, but the benefits your body will receive just from eating a few tablespoons a day will really impart a new sense of well being...
