I made this dish just last night for the first time, due to a large amount of mushrooms bought at a discount and needing to find a home. While I found that the amount of time listed for food preparation to be underestimated – it could just be me, I don’t wield a knife with the best of them and there’s a lot of chopping and slicing – this dish was wonderful and truly more than the sum of its parts.

Sometimes I find myself hard pressed to convince people to add these foods to their diet, because of their pungent flavor, but I assure you will get use to it, and if you use this recipe you will probably actually enjoy it! Not, only is this particular way of preparing sauerkraut delicious, but the benefits your body will receive just from eating a few tablespoons a day will really impart a new sense of well being...

I don’t know about anyone else, but I wait every year for pomegranate season and I don’t even care when they are $3.50...
