Editor's Note from Julie Cerrato: Kitchari is sometimes thought of as the equivalent of "Ayurvedic Chicken Soup." Kitchari is classically a warm, light and nutrient-rich Vegetarian dish that nourishes the mind, body and spirit. There are numerous versions of kitchari that range from soupy to a drier rice medley. Ayurveda recommends using split yellow mung dal as the legume of choice since it is known to digest extremely well and to not produce gas.
