Chicken with Raspberry Plum Sauce

4 servings

1 lb chicken breast, cut into bite size pieces
2 t extra virgin olive oil
Salt and pepper
1 t ground coriander
1 c plum preserves, recipe follows
1 t gluten free Dijon mustard
½ c chicken broth

In a large skillet, heat oil over medium high heat. Season chicken with salt, pepper and coriander. Sauté chicken for 3-4 minutes per side, or until cooked through. Stir in preserves, mustard and chicken broth. Simmer for 3-4 minutes.

Raspberry Plum Preserves

1 lb purple plums, peeled and chopped
1 c fresh raspberries
1-2 t agave nectar, depending on sweetness of fruit

Simmer all ingredients in a medium pot for 15-20 minutes, or until the plums are broken down and have formed a thick sauce.
