Easy Pesto

Editor's Note from Natalie Duhamel: When I'm in a hurry for dinner, I whip up this pesto while I am cooking whole-wheat, multi-grain or brown rice pasta. It's super fast, and incredibly delicious.
If you’re in a hurry for dinner, here’s a quick pesto recipe that you can throw over some pasta. Please, make it whole wheat or flax or something-not-white pasta. And put a nice salad on the side for bonus points.
Ingredients
2 handfuls (yes, that’s an official measurement) of pine nuts
1 handful of hemp seeds
15-20 leaves of fresh basil (MUST be fresh, or this won’t taste good)
1/2 cup of fresh parsley (also MUST be fresh)
2 tablespoons of nutritional yeast (sold in health food stores)
splash of lemon juice
2 cloves of garlic
2 (or more) tablespoons of water – you’ll have to play with the amount based on the texture you want
pinch of sea salt
pinch of black pepper
olive oil to desired consistency
1) Throw it all in a small blender. I use a Magic Bullet but a Tribest or other small blender will do. Whiz it up. Adjust the water and olive oil amounts per your texture preference.
2) Pour over cooked pasta or spiraled zucchini. Toss. Enjoy!
